Ground Beef Stew with Potatoes and Peas
Ingredients
Serves 4 - Preparation time 10 minutes
Cooking time: 30 minutes
(4) tablespoons vegetable oil
(2) onions, finely chopped
(2) teaspoons ground coriander
(½) teaspoon turmeric
(1) 1 inch piece fresh ginger, finely chopped
(1) chili, finely chopped
(1) heaped teaspoon garam masala
(1) lb. ground beef
(½) lb. small potatoes, quartered
(2) cups peas
Salt, to taste
Heat the oil in a frying pan, add the onions, and cook until soft. Add the spices and fry for 5 minutes over low heat. If the mixture starts to burn, add 1 tablespoon of water. Stir in the ground beef and cook over high heat until very well browned. Meanwhile, bring a saucepan of water to a boil. Add the potatoes and salt to taste. Lower the heat, cover, and cook gently for 5 minutes, then add the peas. Continue cooking until the potatoes and peas are tender. Drain and stir into the beef mixture until well combined. Serve hot.
