Cucumber Chutney
Ingredients
Serves 4-6 - Preparation time 15 minutes
(2) small English cucumbers or Lebanese cucumbers.
(1/2) medium red onion - finely diced
(2) small red chilies (traditionally very hot)
(1/2) bunch of cilantro (coriander leaf)
(2) tsp lemon juice
(1) tsp honey
(3) tsp white wine vinegar or rice vinegar
(1) tbls virgin olive oil
Salt and white pepper, to taste
Thinly slice the cucumbers & red chilies and finely dice the red onion. You can partially peel cucumbers in strips giving the slices a checkered edge. I recommend leaving the skin of the cucumber on as it aids in digestion. Chop the cilantro and combine with the vegetables, honey, lemon juice & white wine vinegar and drizzle with olive oil. Salt and pepper to taste. This is a traditional garnish from Mauritius (called Satini Concombre by Island locals) for a variety of dishes (mostly of Indian origin). It is meant to cleanse the palate from the spice overload of a well seasoned curry. Bon appétit from our family to yours!
