Aunt Elisa's Mexican Rice

Ingredients
Serves 4-6 - Preparation time 10 minutes
Cooking time: 20 minutes

(2) tbsp oil
(2) cups white rice
(1) small onion, diced
(1) carrot, diced
(3) cloves garlic, minced
(1) roma tomato, diced
(1 3/4) cups chicken broth, or prepared bouillon mixture
(1/4) cup tomato sauce
(1/2) tsp salt
(1) tbsp fresh chopped parsley or cilantro leaves

Directions

Heat the oil in a large skillet or saucepan over medium-high heat. Add the rice and sauté for about 3 minutes until lightly toasted. Add the diced onion, carrot, garlic, tomato, salt, and parsley or cilantro, and continue sautéing for 2 more minutes. Pour in the chicken broth (or prepared bouillon mixture) along with the tomato sauce and bring to a full boil. Cover, reduce heat to low, and simmer until liquid is absorbed and the rice is tender.
